Hood Filter Maintenance: The Cheapest Fire Prevention in Your Kitchen

Filters are the only part of an exhaust system your own staff can maintain, and they do more to slow grease buildup downstream than anything else on the line.

Below: Hood Filter Maintenance: The Cheapest Fire Prevention in Your Kitchen — explained the way our crews handle the work in the field, written by the Enviroclean Works team in metro Atlanta.

Wash them on a real schedule

High-volume lines need filters washed nightly or every other night. Moderate kitchens can go weekly. Run them through the dish machine or soak them in a degreasing solution, and never put a dripping filter back into a hot hood.

Baffle, not mesh

NFPA 96 requires listed grease filters. Mesh filters clog fast, restrict airflow and are not permitted in most jurisdictions for grease-producing appliances. Stainless baffle filters cost more once and last for years.

Signs a filter should be replaced

Bent frames, separated baffles, corrosion pinholes and any gap between filters where grease can bypass. Filters should sit tight against each other at the correct angle with no daylight between them.

What filters cannot do

Even perfect filters pass some vapor. The plenum, duct and fan still need professional cleaning on your NFPA 96 interval; good filter habits simply keep that interval affordable.
